Preheat your oven to 375°F.
Line a baking sheet with parchment paper.
In a food processor, combine Shredded cheddar cheese, Butter, Flour, Salt , and Baking soda
Pulse until the mixture becomes crumbly.
Add cold water, one tablespoon at a time, pulsing until the dough comes together into a ball. Chill for 20 minutes.
Turn the dough out onto a lightly floured surface and roll it to 1/8-inch thickness. The thinner the dough the crispier the cracker.
Use a knife or pizza cutter to cut the dough into small squares.
For a classic look, use a toothpick or skewer to poke a small hole in the center of each square.
Place the crackers onto the prepared baking sheet, leaving a little space between them.
Bake for 12–15 minutes, or until the edges are lightly golden and the crackers are firm to the touch.
Keep a close eye on them toward the end of baking so they don’t overbrown.
Remove the crackers from the oven and allow them to cool completely on the baking sheet.
They will continue to crisp up as they cool.
