How to make Homemade Cheez-Its

Ingredients
  

  • 8 ounces sharp cheddar cheese freshly shredded
  • 4 tablespoons butter cold and cubed
  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • 2 tablespoons cold water
  • Optional:
  • pinch of paprika
  • garlic powder or onion powder

Instructions
 

  • Preheat your oven to 375°F.
  • Line a baking sheet with parchment paper.
  • In a food processor, combine Shredded cheddar cheese, Butter, Flour, Salt , and Baking soda
  • Pulse until the mixture becomes crumbly.
  • Add cold water, one tablespoon at a time, pulsing until the dough comes together into a ball. Chill for 20 minutes.
  • Turn the dough out onto a lightly floured surface and roll it to 1/8-inch thickness. The thinner the dough the crispier the cracker.
  • Use a knife or pizza cutter to cut the dough into small squares.
  • For a classic look, use a toothpick or skewer to poke a small hole in the center of each square.
  • Place the crackers onto the prepared baking sheet, leaving a little space between them.
  • Bake for 12–15 minutes, or until the edges are lightly golden and the crackers are firm to the touch.
  • Keep a close eye on them toward the end of baking so they don’t overbrown.
  • Remove the crackers from the oven and allow them to cool completely on the baking sheet.
  • They will continue to crisp up as they cool.
