Ingredients

For The Bars:

  • 1 1/2 cups cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • cup granulated white sugar
  • cup lightly packed brown sugar
  • cup unsalted butter melted
  • 2 large eggs
  • ½ tablespoon vanilla extract
  • ½ cup white chocolate chips or chopped white chocolate
  • cup dried cranberries

For The Cream Cheese Frosting:

  • 1 cup cream cheese 9 oz., softened
  • ½ cup confectioners sugar powdered sugar
  • cup white baking chocolate melted
  • cup dried cranberries chopped into smaller pieces
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350°F. Lightly grease a 13×9-inch baking dish with nonstick spray and set aside.
  • In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon until evenly combined.
  • In a separate bowl, combine the granulated sugar, brown sugar, butter, eggs, and vanilla extract. Mix until smooth and well blended.
  • Add the wet ingredients to the dry ingredients in two additions, mixing just until a smooth batter forms.
  • Gently fold in the white chocolate chips and dried cranberries. Spread the batter evenly into the prepared baking dish, smoothing the top with the back of a spatula.
  • Bake for 15–20 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out clean. Allow the bars to cool completely in the pan.
  • While the bars cool, beat the cream cheese, powdered sugar, and vanilla extract together in a large bowl using a hand mixer until smooth and creamy.
  • Once cooled, frost the bars evenly with the cream cheese frosting. Sprinkle with chopped dried cranberries and drizzle with melted white chocolate.
  • After the chocolate has set, cut into 9 large squares, then slice each square diagonally to create triangles. Store in the refrigerator until ready to serve.
