How to Make Crack Corn Salad with Bacon

Crack Corn Salad is one of the tastiest and easiest side dishes to make. It pairs perfectly at any bbq (burgers, steaks, hot dogs) but also doubles as a tasty appetizer and dip.
If making as a dip, pair it with some Frito corn chips.
The reason this is called “crack corn” is because it is so addicting because of how good it is.

- You can make the bacon ahead of time and allow to cool and harden before breaking into pieces.
- This can be made ahead of time and refrigerated for up to 24 hours before serving.
- Store leftovers in an airtight container in the fridge for 2-3 days.

How to make crack corn salad for the perfect side dish or dip
Ingredients
- 4 cups fire roasted corn 3 cans
- 12 slices crispy bacon finely chopped
- 1/4 cup onions diced
- 1 Tomato diced
- 1/2 cup Ranch salad dressing
- 1 cup shredded cheddar cheese
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1 tsp ground black pepper
- Parsley to garnish
Instructions
- In a large bowl add the corn, onion, tomato, garlic powder, salt and pepper.
- Toss to combine.
- Add the ranch dressing and mix to combine.
- Add the shredded cheddar cheese and toss to combine.
- Garnish with parsley
- Serve and Enjoy!
