How to Make Salted Caramel Sugar Cookies

Notes:
- These are a lot like thumbprint cookies so if you’ve ever made those before, these will be easy to make.
- Store leftovers in an airtight container at room temperature for 3-4 days. Can reheat in microwave for 10 seconds to make a bit soft and gooey.

How to make chewy salted caramel sugar cookies at home
Ingredients
For The Cookies:
- 1 cup unsalted sweet cream butter softened
- ¾ cup canola oil
- 1 ¼ cups light brown sugar
- 1 cup powdered sugar
- 2 tsp pure vanilla extract
- 2 tbsp cold water
- 2 large eggs
- 6 cups flour
- 1 tsp kosher salt
- ½ tsp baking soda
- ½ tsp cream of tartar
For The Caramel Icing:
- 2 tbsp unsalted sweet cream butter softened
- 3 tbsp whole milk
- ½ cup light brown sugar packed
- 1 cup powdered sugar
- ¼ tsp kosher salt
- 1 tsp pure vanilla extract
Instructions
For The Cookies:
- Preheat oven to 350 degrees and line two cookie sheets with parchment paper
- Using a large bowl, beat together the butter, oil, sugars, water and vanilla until combined and smooth
- Beat in the eggs one at a time until combined
- Using a large bowl, whisk together the flour, salt, baking soda and cream of tartar
- Gradually beat in the dry ingredient into the wet ingredients until a soft dough forms
- Using a mini ice cream scooper, scoop out some dough and roll it into a ball and place onto the cookie sheet
- Using a flat bottom of a glass, lightly press the dough ball into a thick disk
- Using the back of a spoon, make a indent into the cookie
- Repeat steps for more cookies
- Place into the oven and bake for 8 minutes
- Allow to cool
For The Icing:
- Using a large bowl, beat the butter, milk, sugars, vanilla and salt until combined and smooth
- Fill in the center of the cookies and allow icing to harden
- Enjoy!
