How to Make Crispy Oven Baked Potato Skins

- You can use any shredded cheese you’d like
- You can use homemade bacon or bacon bits.
- Try covering the outside of the potatoes with olive oil, salt and pepper before baking.

How to make Oven Baked Potato Skins with simple ingredients
Ingredients
- 8 russet potatoes
- 2 TBSP butter
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. garlic powder
- 1 1/2 cups shredded cheddar jack cheese
- 6 slices cooked and crumbled bacon
- Sour cream for topping
- Fresh sliced green onions for topping
Instructions
- Preheat your oven to 425 degrees Fahrenheit.
- Scrub the potatoes and poke several holes throughout.
- Bake these right on your oven grates, or on a baking rack, for 40 minutes.
- Remove from the oven, and allow the potatoes to cool.
- Melt the 2 tbsp. of butter by microwaving in a microwave safe bowl for 30 second increments.
- Scoop out the insides of the potatoes, and brush both sides with the melted butter. Season with the salt, pepper, and garlic powder.
- Return these to the oven to bake for about 15 minutes to crisp up the skins.
- Add your shredded cheese and cooked bacon, and bake again for about 5 minutes, until the cheese is melted.
- Top with sour cream and green onions, or your other toppings you like, and enjoy!
