How to Make Homemade Pumpkin Pie Oatmeal

Notes:
- I highly advise you dice the pumpkin in smaller pieces so it cooks faster.
- I love my oats THICK so I cooked them for 8 minutes stirring constantly. You can cook them for a little bit less time if you want yours more runny.
- You can top with granola or chopped nuts. I used chopped walnuts.

COOK TIME: 23 minutes

How to make homemade pumpkin pie oatmeal
Ingredients
- 3 Cups milk
- 1 Cup pumpkin diced
- ¾ Cup oats
- ½ Cup maple syrup or honey
- 2 tsp pumpkin pie spice
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- In a small saucepan over medium heat combine the milk and pumpkin. Cook for 15 minutes or until the pumpkin is fork tender.
- With the help of an immersion blender process until combined.
- Add the oats, maple syrup, pumpkin pie spice, vanilla extract and salt.
- Continue cooking for 8 minutes or until thickened.
- Remove from heat and serve with granola, yogurt or any topping you like.
